It's been a fabulous momentous week for us here at Pure West Radio - now broadcasting on DAB we celebrated in style - and what better way than with cake! My legendary Gin and Tonic cupcake recipe was resurrected and I share with with you this week these super easy delicious tastes of magic on Lawrie's Lifestyle Show 12-3pm.
Gin and Tonic Cupcakes
Ingredients:
175g unsalted butter softened 175g caster sugar 175g self raising flour 3 large eggs 4tbsp tonic water 2tbsp gin or elderflower cordial
Icing: 250g unsalted butter softened 500g icing sugar 4tbsp gin or elderflower cordial Juice of one lime
Step 1 - preheat oven to 160 fan or your equivalent and line a cupcake tin with 12 cases
Step 2 - put butter, sugar and eggs in a bowl and whisk until smooth
Step 3 - gently sift in the flour and fold in with a metal spoon
Step 4 - stir in the tonic water
Step 5 - Â divide the mixture between the cases
Step 6 - bake for approx 20 mins until they are golden and springy and the skewer comes out clean - whilst still warm place on a cooling tray and pierce a few times and drizzle over the gin a few teaspoons at a time - or as much as you dare get away with!
Step 7 - for the icing soften the butter and whisk in the icing sugar, add the gin and lime juice
Decorate with a slice of lime or a topping if your choice and enjoy! 😊
NB - PLEASE REPLACE THE GIN WITH ELDERFLOWER CORDIAL IF BEING EATEN BY CHILDREN OR IF YOU NEED AN ALCOHOL FREE CAKE
