APPLE STRUDEL
Ingredients: 750g Apples - peeled cored and sliced - I used a variety 1.5 teaspoons ground cinnamon 1 lemon zested 2 teaspoons lemon juice 100g caster sugar 75g raisins 95g butter 40g white breadcrumbs Packet of filo pastry Icing sugar to dust
Method:
Preheat oven to 190c/170fan/gas 5 and line a baking tray
Step 1. Mix apples, cinnamon, lemon zest, juice and raisins in a bowl
Step 2. Melt 20g of butter in a pan and fry breadcrumbs until golden and add to apple mixture
Step 3. Melt remaining butter. On a clean dry tea towel lay a sheet of filo and brush with the butter. Lay another sheet and repeat until used up. My packet had 12 sheets so I made 2 small strudels.
Step 4. Pile the filling onto the length of pastry about 2-3cms from the edge and roll tucking in the sides to enclose the filling. Brush with remaining butter and lay on a baking sheet seam side down.
Step 5. Bake for 40-45 minutes until golden brown. Leave to cool then dust with icing sugar and serve with cream or custard - delicious!
