Method: Grease a 22cms square pan and line with baking parchment and begin by making the filling Step 1 - chop dates and put in a pan with the sugar, lemon juice and enough water to cover. Bring to a boil and simmer gently until thick and smooth . Cool before use.
Step 2 - sift in the flour and bicarbonate of soda. Add oats, lemon juice, sugar and melted butter and stir with a fork until mixed. Press half the mixture into the tin, spread with the date filling and cover with the remaining crumb mixture and pat down lightly.
Step 3 - Bake in the oven 170c or 150 fan for 30 - 40 minutes until golden brown and firm - cool, cut into squares and enjoy!
