To celebrate Mothers Day my lovely friend Rosita has sent me her family's favourite recipe- Moroccan Orange and Almond Cake! Super easy, gluten free and with only 4 ingredients it's a real treat!
Method: Step 1 - Boil the fruit with the skin on for approx 20-30 minutes until skin is soft
Step 2 - Chill the fruit then chop into small pieces removing any pips and place in a food processor
Step 3 - Add all remaining ingredients and whizz until smooth
Step 4 - place mixture in a lined tin approx 25cms not loose bottomed and bake in a pre heated oven 190c 170fan for 50- 60 mins or until firm to touch and skewer comes out clean. Cool and serve on its own or with a topping of your choice Delicious!

4 tangerines/clementines/satsumas
250g ground almonds
225g castor sugar
6 eggs
1tsp baking powder
